Things to do when your brain has given up for the day after an afternoon of one lecture overlapping the other: Cookies!
Cookies, cookies, cookies!!! Chocolate chip ones.
These ones are particularly great, because they are 1) superquick to make and 2) requires almost no washing up!
First mix together the dry ingredients, being:
- 2 dl oat flour (I grind my own in the food processor)
- 4 tbsp brown sugar
- a handful of chocolate chips
- a pinch of salt
- ½ tsp baking soda
- 2 tbsp coconut oil (melted)
- 3-5 tbsp milk of choice
- 1 tsp vanilla essence
The measurements are approximate, but if you feel it gets too wet alternatively too dry just add more flour/liquid. The oven goes on 190 degrees.
Roll the dough into little balls and bake in the oven around 7 minutes, or until they have just melted and caught a little color. Once you remove the cookies from the oven, you must leave them on the tray for ca 10 minutes before you try to remove them, as they will continue to cook as they cool down.
If you wish to have soft cookies – simply refrigerate the dough until cool before making the balls. For a crispier cookie, just put them straight into the oven.
And voila, I guess dinner is served 😉
